Offer this sun-loving thistle cultivar to your customers as a versatile conversation starter. French Artichoke can be cultivated as an edible plant, but also as a striking feature garden extra, or even planted in a pollinator bed to interest passing bees in its nectar. Each flower head consists of small buds and bracts atop the edible base. The buds burst into bloom from late spring to early summer, reaching 3-6" wide. Once the large, purple flowers appear, the artichoke is no longer edible, but does add a stunning pop of color and interest to the landscape. Try them in back borders—the plants grow to 7 feet tall at maturity! Spent flower heads also provide a nice visual during the winter months.
